Some useful beef terms and facts:
Live Weight -- The weight of an animal while it is living.
Hanging Weight -- The weight of an animal after hide, head, and hooves, etc. have been removed. Commonly around 60% of live weight.
Take Home Weight -- Actual weight of meat you receive after packaging. This is around 62% of hanging weight.
Only 37% to 40% of live weight will be the take home in-the-package weight. For example, an 1100 pound live steer will be roughly 660 pounds of hanging weight, and have take home in-the-package weight of around 400 pounds. This varies slightly depending upon the amount of bone-in cuts and the percentage of fat in the ground beef. The corn-finished steers average about 70 pounds more in hanging weight.
Also keep in mind the top quality steaks are cut from the rib and short loin which will comprise only 18% of the animal's final dressed weight.
